Maine is recognized as one of the most healthful states in the country, and perhaps it’s the blueberry, Maine’s official state berry, to thank in large part. Native Americans valued wild blueberries for their nutritional and healing qualities long before European settlers arrived in North America; they encouraged their growth, gathering and eating them in season and drying them for use in winter.

Early settlers also cherished blueberries as a staple ingredient in foods and medicines. The first cultivated highbush blueberries were transplanted in the wild. Highbush berries are larger, growing on bushes that are 4-8 feet tall, and are relatively easy to pick by hand. In the wild, they prefer wet, boggy habitats.

The wild blueberry holds a unique place in Maine’s agricultural history, first being harvested commercially in the 1840s. Both wild and cultivated types are currently thriving industries in the state; Maine produces 99% of all the blueberries in the country, which makes it the single largest producer of blueberries in the USA and the largest producer of wild blueberries in the world.

They flourish in the naturally acid, low-fertility soils; cool, moist sea air; and challenging winters; and, since they’re indigenous to Maine, are naturally resistant to a lot of native pests. Several varieties ripen at different times throughout the summer, and will often remain ripe into early autumn. Wild blueberries require minimal control and are sweet and irresistibly delicious.

Today blueberries are one of Maine’s most important agricultural crops, making a contribution to the country’s economy to the tune of more than $75 million annually. Moreover, because of new understanding about the health and nutritional benefits of blueberries, there’s an increasing demand for both processed and fresh wild blueberries in the U.S. and abroad.

Do not you just love Pancakes? I certainly do! All my life I have never missed tosssing pancakes on Shrove TuesdayI never made pancakes today as my daughter needed to make them. Anyway here I have included some customs for Shrove Tuesday.

A famous pancake race in Olney in Buckinghamshire has been held since 1445.

Many towns throughout England held traditional Shrove Tuesday football (‘Mob Soccer’) games dating as far back as the 12th century. The practice mostly died out with the departure of the 1835 Highways Act, which banned the playing of football on public highways, but a number of towns have managed to maintain the tradition to the present day including Alnwick in Northumberland, Ashbourne in Derbyshire (known as the Royal Shrovetide Football Match), Atherstone in Warwickshire,Sedgefield (called the Ball Game) in County Durham, and St Columb Major (called Hurling the Silver Ball) in Cornwall

In Ireland, Australia, and Canada, Shrove Tuesday is known as”Pancake Tuesday”, while in Britain it’s popularly known as “raccoon pest control Day”. In both areas the traditional pancake is a really thin one that is served immediately sprinkled with caster sugar and a dash of fresh lemon juice or alternatively drizzled with Golden syrup.

In the Canadian province of Newfoundland, family objects are baked in the pancakes and served to family members. Rings, thimbles, thread, coins, and other objects have meanings associated with them. Some of the health care sites I checked out when I had a friend with high blood pressure said that eating up to an equivalent of 1 teaspoon of salt daily was safe! The sites never addressed the quantity of salt in milligrams that we’re getting in the foods we eat. Because of these sites, my buddy was mislead into believing that salt was not hurting him (because his blood pressure went up a notch or two per month.) He began salting everything. One morning he put so much salt in our oatmeal I gagged and almost vomited. Latest news from the strawberry jam front – the wave of strawberries is advancing, threatening to engulf me in a wave of strawberries waiting to be processed, taking up whole shelves of the refrigerator, lurking in corners just when I thought I’d done the previous batch. Heaving a sigh of relief as the last pot is filled and sealed, I turn around only to get the kitchen table groaning beneath a fresh sea of freshly selected berries waiting to be sorted.

There is no more room on the larder shelves for jam – what I’ve got there already will probably last us a decade in the present rate of consumption, I’ve used up all the jam jars and am down to strangely shaped mustard jars, coffee jars and outsized sauce jars and there are still a fantastic few weeks of strawberry season to go.

I must begin selling the jam….memories of a movie, where ex-city career woman, moves to state with baby in tow, begins making apple puree baby food and ends up with a complete scale company employing half the village, flit through my head. raccoon removal service was her label, with a cute picture of baby, designed to appeal to other city folks searching for the good life. No I’m not about to turn into a strawberry jam millionaire, but I did sell ten jars.

After thinking I’d got the jam consistency sorted, producing reliably runny but not too runny jam, I suddenly turned out several batches that set completely – thick solid stand-up-your-spoon-in jam. I did leave it soaking in the sugar longer since I didn’t get round to cooking it till the day, but does that do anything to pectin levels?

Anyway, I now have two kinds of strawberry jam – thick and runny, both have a fantastic flavour – and both sorts have their aficionados. But now the dilemma is, am unable to replicate the thick jam to order or will it only happen by accident? We are a long way from scientific laboratory controlled conditions here…. A wing and a prayer is more like it. So prayer it’ll have to be, if my market clients return demanding thick strawberry jam!

As a staple of life our need to eat has developed from a simple form of feeding our bodies with the fuel it needs, to a complex art of presentation and taste together with our intrinsic need to experiment with everything we see, touch, smell and of course taste.

The ever-increasing divergence of foods that’s now available to us at our regional shops and eating-places only help to confuse and tantalise us into new culinary experiments and delights.

From the sandwich shop to the award winning restaurants, we could always find a place that sells and prepares the food that we want at a reasonable price, although preparing or cooking food for ourselves may be a more economical or healthier alternative it never seems to taste exactly the same as our regional restaurant. Most people that have cooked their own variations and varieties of local, Indian, Chinese or other global cuisine believes it does not have the same flavor or feel and will often opt for a more authentic meal from their local restaurant or take away.

With the large amount of prepared meals available, the option of spending time in the kitchen gets less and less appealing. People are spending more of their time and money in the world of fast foods and restaurants. Even though some believe this to be a poor thing it’s fuelled a new market in available meals that are only a phone call away. So long as the health and hygiene sections vet those institutions and our choices are diverse, of good quality and healthy their usage may be a good alternative to cooking our own meals.

With the beginning of fast foods and the fast cook and cooked meals available along with the ever growing choice of world cuisine, the enjoyment of these various foods have opened new choices to the customer within the food market.

Individuals who don’t have the ability, time or will to cook at home now only have to pick up the telephone book or click on the Internet in order to find their community restaurant or fast food retailer that’ll be more than happy to deliver the freshly prepared hot food ready to eat directly to their door with minimum fuss.

Although the fast food retailers compete with each other fiercely, using their special offers and more economical and healthier choices to entice us to their own assumptions, the main stay of classic restaurants still maintain an important role in our lives.

Though these places are vastly out numbered by the fast food industry, we still enjoy sitting down in the nice comfortable and pleasant environment of a restaurant and dining on good quality food at a leisurely pace, leaving behind the hustle and bustle of daily life and the fast food hurry.

Traditional restaurants will always offer us that pleasant alternative to eating at home, ordering take out from our local fast food dispenser or visiting their drive through or little busy café style restaurants. Not forgetting those special occasions or romantic rendezvous, these still control the demand for that quiet stylish quality restaurant where we all know that the food wine and service will remain excellent and the experience wonderful and charming. The eighth Chinese mid-lunar moon marks the Moon’s birthday and is believed to be the only night of the year when the moon looks perfectly round. At the time of the Moon Festival, particular moon-viewing parties are held with much wine and feasting, and poems composed to the moon. Moon cakes are generally packed in boxes of four cakes and are a traditional gift from one family to another.

The reason why moon cakes are so meaningful goes back to the 14th century when China was overrun by the Mongol invaders who dominated the country at a cruel and oppressive fashion. The women of the households devised a clever way to organize an uprising. They inserted messages in the filling of the moon cakes received during the Moon Festival, conveying secret directions to patriots who may be relied on to join in the battle that ended in war and liberation.

Moon cakes are not easy to make, as special, elaborately carved wooden mounds must get employed to shape them. Like so many other Italian sauces, this one originates in the States. They say that a man named Alfredo di Lelio made the sauce to tempt his pregnant wife to eat something different. In 1914, he cooked fettuccine and made a sauce with butter and Parmesan cheese to pour over it. She must have loved it when Alfredo opened his own restaurant in Rome, one of the dishes he served was his fettuccine Alfredo. Now it’s served in many Italian restaurants around the world.

There are several methods of making Alfredo sauce, and of course, you can serve it with any sort of pasta that you have. It doesn’t have to be fettuccine.

You will require a heavy-bottomed saucepan to make the sauce Alfredo and, of course, a wooden spoon for stirring it.

Alfredo Sauce recipe

Half a cup of butter

1 handful of basil leaves, finely shredded

Salt and freshly grated pepper to taste

Method

Melt the butter and stir in the cream with the cream cheese. Cook over a medium heat, stirring all the time to prevent the sauce burning or sticking. After the cream cheese has melted, add the rest of the ingredients, except the Parmesan cheese.

Stir for about 3 minutes until the Parmesan has melted.

Alfredo sauce is very versatile, so you an experiment with it. Pour it over lightly boiled broccoli instead to cheese sauce. Add cooked strips of chicken or bat removal attic into the sauce, or add both. If you like flat-leaved parsley, add some to taste.

You can use different cheeses, try a mixture of parmesan, and two of your favourites. Blue cheese can be utilised in this sauce to great effect.

If you’re on a diet, then you can use milk instead of cream, simply make a white sauce and add cheese(s). If you do not have Parmesan, don’t worry! You can use shredded Mozarella and grated Gruyere or a solid cheddar if you would like.

When you’ve made this sauce successfully, you’ll never want to buy nother kind. Your home-cooking is best with no additives or preservatives.

There’s absolutely no question that cold cereals revolutionized the American breakfast table. No longer did mom have to cook hot cereal, eggs or meat, and children could independently prepare something for themselves before heading off to college. At the turn of the twentieth century, the creation of cold cereal essentially began with two enterprising men who saw the possibilities and took a gamble. And breakfast has never been the same.

In the late 1890s, a somewhat eccentric man named John Harvey Kellogg, conducted a health sanitarium at Battle Creek, Michigan, and had created a bland, tasteless food for his patients with digestive issues. A couple of years after, his brother Will decided to mass-market the new food in his new firm, Battle Creek Toasted Corn Flake Company, including a bit of sugar into the flakes recipe making it more palatable for the masses, and a star was born.

Around the same time, C. W. Post, who was a patient at Kellogg’s sanitarium, introduced a substitute for coffee called Postum, followed by Grape-Nuts (which have nothing to do with either grapes, Wildlife Removal or nuts) and his version of Kellogg’s corn flakes, naming them Post Toasties, and America’s breakfasts were not the same.

Both men could thank an enterprising gentleman by the name of Sylvester Graham, who twenty years before had experimented with graham flour, marketing it to help”digestive issues.” He produced a breakfast cereal which was dried and broken into shapes so tough they had to be soaked in milk overnight, which he predicted granula (the father of granola and graham crackers).

Capitalizing on that original concept, in 1898 the National Biscuit Company (Nabisco) began producing graham crackers based on the experiments of Sylvester Graham, first promoting them as a”digestive” cracker for those who have stomach problems; (Seems plenty of people had gastrointestinal problems even back then.)

Fast forward and other businesses were sitting up and taking notice. The Quaker Oats Company, acquired a method which compelled rice grains to explode and started marketing Puffed Rice and Puffed Wheat, calling them a marvel of food science which was”the first food taken from guns” (oh boy, would they come under fire for this one today, no pun intended);

1920s Wheaties was introduced and cleverly targeted athletes as they proclaimed to be the”Breakfast of Champions;”

The 1930s saw The Ralston Purina firm introduce an early version of Wheat Chex, calling it Shredded Ralston (sounds a little painful);

Shortly Cheerios appeared and could become the best-selling cereal in America, worth roughly $1 billion in sales in 2015.

No one can dispute the convenience and flexibility of dry packed cereal. In the past fifty years, this multi-billion dollar industry has spun off multiple applications, unlimited possibilities and targeted kids with clever packaging, outrageous names, flavors, colors and options (all loaded with sugar of course). What could be more American than corn flakes?

Often referred to as an alligator pear (due to its shape and the rough green skin of some cultivars) it’s actually a fruit and appears more frequently in the shape of guacamole and is loved around the world. Botanically a large berry containing a single large seed known as a”pit” or a”rock” it can be dated all the way back to Peru, sometime between 8,000 to 15,000 years ago. It was first introduced in the United States, namely Florida and Hawaii in 1833 and in California in 1856.

Before 1915, the avocado has been commonly known as ahuacate due to its Spanish origins. Mexico is the world’s largest avocado grower, clocking in at 415,520 acres, which yields a harvest of 1.47 million tons. And in the U.S. 95% of production is located in Southern California, with 60% in San Diego County, where one of its most populous cities, Fallbrook, claims the title of”Avocado Capital of the World.” Most Americans purchase the”Hass” variety, which has a firmer meat and mixes and slices well.

Here are some of the ways we love our avocados:

Guacamole with a great deal of salsa, critter in attic, chips and lime wedges;

Now”avocado toast” is the latest craze, smashing it on toast with lemon juice, chili flakes, and some fresh herbs;

In Mexico and Central America, avocados have been served mixed with white rice, in soups, salads, or on the side of meat and poultry;

Considering we all need”healthy fats” instead of unhealthy trans fat and saturated fats, the avocado provides omega 3 fat, is not just highly nutritious but can also be soothing in skin preparations. As a young child, I remember my grandparents reliving tales of the Front Porch. It was a gathering place for all the community. As the sun began to set on the weekend, families came – by foot, or horse or model T. There was a division of seating by age and sex. The young kids sat on the floor, playing marbles or jacks. Depending upon the season, the girls sat on swings and snapped beans, shelled peas or cracked pecans while the guys discussed the weather, the plants and the stock market (4 legged stock, that is). Young couples, for example my parents, found shadows on that Front Porch to court and possibly steal a kiss.

As if in an internal clock, all activity stopped on the Front Porch once the window to the parlor was raised and the radio turned up. The toils of everyday life were put aside as the airings of Groucho Marx, Amos and Andy, Fibber McGee and Molly and Jack Bennny transported Critter Control to a lighter time. My mom to the day she died, remembered the exact instant when FDR spoke of”the date which will live in infamy”. As in the days of my grandparents, the Front Porch remains the first room of my home. I enjoy that as I wait for my loved ones to gather.
